Chocolate Pecan Pie Truffles – GF, Vegan

If your a fan of Pecan Pie then you’ll definitely love these little nuggets. Dangerously healthy, they’ll be gone before you get a chance to store any in the fridge. Easy to make!

Serves: 30balls
Ingredients
- 100g Pecan nuts – soaked for approx 2 hours in room temperature filtered water
- 50g Cashew nuts – soaked for approx 2 hours in room temperature filtered water
- 15 dates – pips removed
- 1 Tbs raw cacao powder – I used Green & Black’s
- ½ tsp ground nutmeg
- 1 tsp ground cinnamon
- 1 tsp vanilla extract
- ⅛ tsp Sea salt
- 2 Tbs Maple Syrup
- 4 Tbs Buckwheat flour
- 2 Tbs Filtered water
Instructions
- Place all ingredients in a food processor
- Blend for 1 – 2 minutes
- Watch closely as it will form into a hard paste quiet quickly
- Either with a teaspoon or with your hands, rolls into small balls of approx 13g each
- On a place scatter some raw cacao
- Place all the balls onto the plate then toss from side to side until all the balls are coated in cacao
- Store in an air tight container in the fridge
- Will make 30 balls
