Delicious 2 Ways with Smokey Roast Cauliflower & Tomato – Soup OR Bake – GF, Vegan

The roasting of Cauliflower produces a lovely smokey flavor, especially when you leave chunks of cauliflower in the soup. When I roasted all the vegetables then combined them in one baking dish in preparation to blend, I realized just how yummy this was all on its own. I was in two minds to leave it as is, as it was DELICIOUS! But I needed soup for the next few days and didn’t want to make another batch. So I kept some on the side. I will definitely be making this dish again. Highly recommend this lovely combination of soft, smokey cauliflower with soft juicy tomatoes and leeks cooked slowly until they melt in your mouth.

Ingredients
  • 1 lrg or 650g Cauliflower – Chopped into bite size pieces
  • 1 lrge or 300g Leek – chopped
  • 1 kg Ripe Tomatoes on the vine – quartered
  • 6 Garlic cloves – skins still on
  • 2 sm Hot Green Chili Peppers
  • 130g Carrots – chopped
  • Juice of 1 Lemon
  • 2 Tbs Nutritional Yeast
  • 1 Tbs White Miso Paste
  • 2 cups Vegetable Stock
  • MARINADE FOR CAULIFLOWER BAKING DISH
  • Dried Thyme
  • Rock Salt
  • Cracked Pepper
  • Pinch of Chili Flakes
  • MARINADE FOR TOMATO BAKING DISH
  • Dried Basil
  • Rock Salt
  • Cracked Pepper
  • Pinch of Chili Flakes

Instructions
  1. Pre-heat the oven to 160 degrees Celsius
  2. Have on hand 2 large baking dishes
  3. In one, add the Cauliflower, half the leek, carrots and any remaining tomatoes that don’t fit in the other baking dish.
  4. Sprinkle with Thyme, Chili, Salt & Pepper. Toss and combine well.
  5. In the other baking dish, place all the tomatoes, the remaining leek and garlic
  6. Sprinkle with Basil, Chili, Salt & Pepper and combine well
  7. Cover both baking trays with foil
  8. Bake for 1 hour
  9. Uncover the Cauliflower dish only
  10. Continue to bake both dishes for an additional ½ hour (tomatoes still covered)
  11. Remove and allow to cool
  12. Combine both into one baking dish
  13. At this point you can serve as is, as it’s deliciously smokey and succulent OR you can blend half with 1 cup of Vegetable stock then add this pureed portion and the chunky portion to a large saucepan
  14. Add the remaining stock, Nutritional yeast & lemon
  15. Bring to boil
  16. Turn off heat
  17. Add the White Miso Paste
  18. Serve as is or with a dollop of unsweetened homemade yoghurt
  19. This soup just bursts with flavor! The chunks of smokey cauliflower and juicy bursts of soft & succulent tomatoes are maddening
  20. Enjoy! Cause I certainly am!
