RAW Pumpkin & Coconut Tart – GF, Vegan

A taste explosion! Just like a pumpkin pie! This recipe was slightly adapted from ‘Raw food, Real world’.

Ingredients
  • FOR THE TART CRUST
  • 1.5 cups Almond Flour
  • ½ cup Almond Flakes
  • 1 cup dedicated Coconut
  • 4 Tbs Date Paste (see my recipe under ‘condiments’)
  • 1 tsp Stevia
  • 1 Tbs Agave
  • 1 Tbs Maple Syrup
  • 1 Tbs Coconut Oil
  • 1 Tbs Coconut Mana
  • Pinch of Salt
  • FOR THE TART FILLING
  • 1 cup raw Cashews, soaked for 2hrs in filtered water
  • 1 cup fresh Thai coconut meat
  • 2 cups carrots – chopped into small pieces
  • 1 Tbs Coconut oil
  • ¾ cup Agave
  • ⅓ cup Date Paste (see my recipe for this under ‘condiments’)
  • 1 Tbs Vanilla Extract
  • 2.5 tsp ground Cinammon
  • 2 tsp ground Ginger
  • ½ tsp ground Nutmeg
  • 1 tsp Sea Salt

Instructions
  1. FOR THE TART CRUST
  2. In a large bowl place all the ‘Tart Crust’ ingredients and combine well.
  3. Line tart trays or tins with the crust mixture
  4. Place in the fridge for at least 1hour
  5. FOR THE TART FILLING
  6. First place the carrots in a high speed blender with some filtered water and blend until smooth
  7. Scrape out the young coconut meat from the coconuts
  8. Add the rest of the ingredients and blend until smooth
  9. Spoon the mixture onto the crust and refrigerate for a further few hours
  10. Any remaining filling can be eaten as is or frozen for future use in other recipes
  11. Freezes very well.
