Giant Bean & Tomato Soup – GF,Vegan

A hearty soup, fresh, chunky and delicious!

Ingredients
  • 1 Spanish onion – sliced
  • 4 Garlic – diced & sliced
  • 2 sm Leeks – sliced thinly
  • 3 Carrots – sliced
  • 2 Celery – sliced
  • 150g Butternut Squash – peeled and diced
  • 1 Courgette – sliced
  • 4 lrge Tomatoes – chopped
  • 1 Tbs Tomato paste
  • 2 cans chopped Tomatoes
  • 3 cups Vegetables tockS
  • 1 tsp dried Chilli Flakes
  • ¼ tsp Stevia
  • 1-2 tsp Sea Salt
  • 230g Savoy Cabbage – thinly sliced
  • 1 can Giant Beans (approx 240g drained)
  • 1 bunch Basil – coarsely chopped
  • 1 bunch Parsley – coarsely chopped

Instructions
  1. In a large saucepan, cook the onion, leek and garlic in enough filtered water to just cover. Cook for approx 10min on med-low heat or until translucent
  2. Add the carrots, celery, squash, courgette, tomatoes, tomato paste, can tomatoes, stock, chilli flakes, stevia and salt.
  3. Bring to boil, and then simmer for 20min
  4. Add the cabbage, beans and parsley
  5. Simmer for an additional 10min
  6. Add the basil
  7. Turn the heat off
  8. Serve with a sprinkling of finely chopped spring onions and cracked pepper
