Giant Bean & Tomato Soup – GF,Vegan

Ingredients
- 1 Spanish onion – sliced
- 4 Garlic – diced & sliced
- 2 sm Leeks – sliced thinly
- 3 Carrots – sliced
- 2 Celery – sliced
- 150g Butternut Squash – peeled and diced
- 1 Courgette – sliced
- 4 lrge Tomatoes – chopped
- 1 Tbs Tomato paste
- 2 cans chopped Tomatoes
- 3 cups Vegetables tockS
- 1 tsp dried Chilli Flakes
- ¼ tsp Stevia
- 1-2 tsp Sea Salt
- 230g Savoy Cabbage – thinly sliced
- 1 can Giant Beans (approx 240g drained)
- 1 bunch Basil – coarsely chopped
- 1 bunch Parsley – coarsely chopped
Instructions
- In a large saucepan, cook the onion, leek and garlic in enough filtered water to just cover. Cook for approx 10min on med-low heat or until translucent
- Add the carrots, celery, squash, courgette, tomatoes, tomato paste, can tomatoes, stock, chilli flakes, stevia and salt.
- Bring to boil, and then simmer for 20min
- Add the cabbage, beans and parsley
- Simmer for an additional 10min
- Add the basil
- Turn the heat off
- Serve with a sprinkling of finely chopped spring onions and cracked pepper
